One of the most appreciated recipes of the Italian culinary tradition, it is always very successful, especially for its simplicity, which is able to enhance every ingredient. And to give it an extra touch of flavor, today we will add a special ingredient: Extra Virgin Olive Oil flavored with Truffle!
– 500 gr of rice
– 150 gr of thick-cut speck
– 200 gr of red radicchio
– 2 glasses of red wine
– 2 liters of vegetable broth
– Basso olive oil
– 1 Shallot
– Parmesan Cheese
– Extra Virgin Olive Oil flavored with Truffle
Prepare the broth to your liking, the important thing is that it is vegetable because meat or chicken broth could cover the delicate flavor of the ingredients. In a saucepan, place the shallot cut into small cubes, a knob of butter and a drizzle of olive oil (which will help raise the smoke point of the butter as well as give intensity to the flavors) and let it brown. Add half of the washed and julienned radicchio and the speck cut into strips to the pot. Allow to soften and add the rice, first toasting it with the ingredients and then adding the red wine. Continue cooking with the broth, adding and stirring from time to time. Remove from the heat when the rice reaches the preferred consistency and add the remaining radicchio, a knob of butter and the Parmesan cheese, continuing to stir vigorously to obtain a perfect mix.
Before serving, in a red-hot frying pan fry strips of speck until crispy. Add them to the risotto along with a drizzle of Truffle Flavored Extra Virgin Olive Oil, which will give this dish an unprecedented flavor.
The Olive Oil used in the preparation of the soffritto serves to increase the smoke point of the butter during cooking, enhancing the personality of each ingredient thanks to its neutrality. Extra Virgin Olive Oil flavored with Truffle, on the other hand, is used at the end of cooking and before serving the dish to give a touch of personality to the recipe, enhancing each ingredient with its unmistakable flavor.
