The intensity that distinguishes the green color of this oil also manifests itself in the flavor: rich, robust and complex, which makes reference to tomato leaves, aromatic herbs and unripe tomatoes.
A product for which the olives are harvested with a slight advance, so that when they arrive at the factory for being processed, these are perfectly ripe and ready to give life to a very good oil.
For the production of this exceptional oil, only olives from Western Sicily are used.

The dishes on which this oil manages to give its best are those based on fish and meat, especially on sliced beef. It also gives excellent results with legumes, salads and vegetable soups.
