Mayonnaise with Extra Virgin Olive Oil

It is one of the most famous sauces in the world, the most delicious for children but also for adults. Homemade, with our olive oil, it is also healthier. However, the secret of mayonnaise is patience: to mix the two main ingredients requires patience and it is recommended to use a mixer or other appropriate tools to prevent it from going crazy, it means that the oil and the egg do not bind.

Ingredients (room temperature):

1 egg and a yolk

200gr di olio extravergine d’oliva Basso

200gr of Basso Extra Virgin Olive Oil

1 teaspoon of vinegar or lemon, a pinch of salt and pepper

Method:

Put in the mixer a yolk and a whole egg start at full speed pouring in a trickle of extra virgin olive oil. When the sauce begins to thicken add the vinegar or lemon, salt and pepper and restart until it has a light color. Pour the mayonnaise into a container, cover and refrigerate.

What if it goes crazy?

Add an egg yolk and start the mixer on high until everything is mixed.
