Typical recipe from Tuscany, the sweet focaccia with grapes is made with a soft and fluffy dough; when you bite into the grapes, the flavors mix together creating a very sweet effect, very tasty and special.
Today we will prepare it with Basso Extra Virgin Olive Oil.
500 gr of flour
500 gr of grapes
40 gr of Basso Extra Virgin Olive Oil
100 gr of sugar
15 gr of brewer’s yeast
250 gr of water
Cut the grapes and try to remove the seeds as much as possible. In a very large bowl, you will need to first mix flour and sugar; after making a hole in the center, you will need to add the yeast dissolved in a little warm water. Add the rest of the water and mix slowly (avoid pouring the water all at once, it may not help). Now, add the Extra Virgin Olive Oil and continue to knead until the mixture is smooth and homogeneous (it will take about 10 minutes, if you are more comfortable you can transfer the dough on a floured pastry board). Let it rise for a couple of hours, taking care of covering the dough with a cloth. Once the rising process is complete, divide the dough into two and, using a rolling pin, roll out two rectangles of dough. Butter a baking pan and place the first sheet of dough; then place a layer of grapes and sprinkle with sugar, then close with the second sheet of dough, trying to close the edges. Make another layer of grapes and leave for another hour to rise. Sprinkle with sugar again and bake in a preheated oven at 200°C for about 20 minutes. Let it cool and enjoy the focaccia with EVO oil and grapes!
